Here is my dilemma. Three to four nights a week; I have to rush from work to a military event. I have no time for supper which honestly is wearing me down and is making me feel ill. Some ideas I have are making wraps; eating fruit, smoothies, granola bars, and energy bars as I have to eat on the run (while driving). I am going to take a few extra vitamins but I really need something healthy for supper. Any ideas for a good healthy meal on the run?

My on-the-run meal is usually a corn tortilla
with refried beans (green chili/lime) cheese, (my own salsa) sliced olives, and MW heated for a minute. My own salsa: Chopped: tomatoes, red onions, red, yellow and orange bell peppers, lite rice vinegar-soaked cukes, cilantro, splash lime and marinatd.. kept on hand. This might be tricky on the road without a holder or container of some kind, but has enough flavor to compensate and make you feel satisfied. |

For a quick meal, I usually start with kaviar and corn chowder, followed by a broth soup. Chicken, beef, or goat. Next, two full phledged quails, totally deboned, deep fried or bbqd. Then potato salad with breadcrumbs and chili beans, for meat, a stuffed cabbage. The cool-down period consists of pancakes, bordello wine, and haphazard-cake (same as an upside down cake, except I do the upside-downing.) Washed downings (only if fresh from the market) with Blutkartoffeln wine, then for desert, rasperberry-chocolate-torte, generously served. Apres-vomit, a few slivers of "After 8" chocolate brisquettes.

Seriously speaking, I like to eat when I drive some meal that:
- won't create a mess - won't need my visual attention - won't need more than one hand at any one time during consumption of it. I sometimes do bad things like eat chips out of a bag, which makes minimal mess, but has fewer and less amount of poisons than energy bars and other healfood, while its provision of pure, unadulterated calories per volume is more efficient. You won't get a sugar rush then, and an over-insulin rush after the sugar rush, like with energy bars and other junk you mentioned. Another simple meal is slices of bread, or dinner rolls, any kind; or things like kaisers or such bread-like baked products, with simple cold cuts. You open the package of meat, and take it slice-by slice into your mouth, in between mouthfuls of carbs. Simple meal makes little mess, no preparation time, amount is to need, no salt or other seasoning is ever missing or too much. Simpler even than that is egg-bread. All by itself; if its boring, then beforehand you can spread butter or Becel (in my world) margarine spread on it. Becel here in South Ontario is a margarine that's twice as costly as other Marges, but it's totally lacking in hydrogenated oils. ----------------- These are good one-person, driver-eaten car meals. The beauty of the chips is that you can pick it up anywhere. No dip!! So buy one that you can eat without dip. The other meals conspicuously lack in greens, and other healthy food stuffs but you can't have everything all at once. Ther are areas of life where you have to live with trade-offs, and this is your area of food-life when your trade off is sustainance for convenience on three fronts. These are desparation meals, in the sense that you are not doing it regularly or because you are "bad" but because you are foced to do them. And frankly, if you are going to be food deprived for the next few hours, you need something solid and substantial in your system, something that will last you. If anything, these meals will prevent headaches and losses of weight off your waist. "Remember, troops: An army travels on its stomach." |

You have given me some good ideas but as far as chips and other types of junk food; it would only make me sick. I generally eat very healthy meals; so fast foods and junk food don't agree with me. |

If you happen to like any kind of Tuna salad, or chicken salad. You make a batch when time permits, and buy a head of Romaine lettuce (large leaf spears). Use each leaf as the wrapping for the salad. Put them in a container and off you go.

(When marinating the flavors blend out of the salsa, so there are no 'hot' spots, easy to leave out the onion, I would think.) |

Trail Mix can be a great source of energy when your on the go. Also maybe a few pieces of string cheese.

I found something neat at the Asian market called Salad rolls which you get at a Vietnamese restaurant. I am going to make them but change it up a bit adding some of my own fave veggies. |

How about a simple banana milk shake? Throw in some nuts, cinnamon, nutmeg, coconut flakes, vanilla essence, berries, etc and u have urself a pretty healthy and well-rounded meal. Takes 10 mins tops. freeze the bananas first, turns into a killer smoothie.

I have done the fish, egg, meat salads thing and can recommend it also! 8^) Spreads are nice particularly if "less juicy" Good old fresh veggies and fruit are a nice complement. I view it as eating my salad one component at a time. Favorites for me are peeled apple slice or oranges, banana, raisins or dried cranberries or mixed gorp, baby carrots, sliced pita or tortillaor nan, celery, cucumber, pickles or olives, cherry tomatoes can be good, jicama...well you get the idea. Sometimes I use the tortilla or nan and eat the spreads indian style. I have also had yogurt or gogurt or marinated tofu with or without a sauce. The tofu can be made into a salad spread too. Thanks slowhand for the advice. I will have to take some time to prepare the food ahead of time and eat at work. The police are really clamping down on eating and driving. I lost three pounds in a week from not eating my meals and this is not good. I am tired and run down so I better take some time tomorrow and get my ducks in a row.

Got a crockpot? Make some homemade soup. My favorite is beef barley. An easy way to make any homemade soup is to start with canned soup and just add more stuff to it, whatever you like. That cuts down on the sodium content, too. Then store the soup in individual servings in things like jelly jars or yogurt containers. They freeze very well. Microwave them when ready to eat. A nice hunk of french bread or a biscuit, and you've got a good meal.
I see you're more thinking about eating in your car? Hm. Peanut butter and banana sandwich on whole wheat bread? Put peanut butter on both slices of bread so the banana doesn't slide around. I used to make CAT sandwiches: cheese, avocado, and tomato. Preslice the cheese and they're very quick to make. One of my favorite car meals is sharp cheddar cheese and apples cut up and put in a plastic container. Add some walnuts for even more protein. You've gotten some good ideas, those are my two cents. Can't let you starve yourself! |
