Boudain is rice, pork pate' and CRAWFISH with a little cilantro and ceyenne pepper shoved into a sausage casing. after cooking, the casing explodes when the fork touches it and spews out the rice and meat............god it is good. Nice guess with the "ham" though......... |

This reminds me of a story. I was up in Cleveland Ohio doing some fishing one time. I was fishing the Cuyohoga river ( yes the same river that caught on fire ) . I was fishing below a damn and I looked down by a rock. There was the biggest damn crayfish I ever saw. Big as a lobster and missing one claw.......
