Its easy.
you use cloud alone and use final attack + phoenix.
Then when ruby kills cloud the party comes back, then you hit with limits and powerful magic (no KoTR). When he buries his tenticles, kill off everyone but cloud.
Rinse repeat.
One healer use megalixers if you don't have but 1 use the copy glitch.
One limiter, use the item that cures the depressed thingie to give cloud fury before battle. Makes your limit bar fill faster.
One person to use strong summons/multihitting limits.

My team was barrett tifa and cloud.

Emerald is a bit easier. Just KoTR and mimic.

Heh, your doing it with summons?

He does it without summons. If I remember correctly, he does it with 4x with absorb materia so he can heal during every atk. He throws in somewhere a hero drink/elixer or something stronger (mind you i'm trying to remember), and mimes the last command. once the limit is ready he uses it, but as soon as he does, it jumps straight to 4x cut and his elixer command and is able to use his limit again because of the mime command.

And beats Emerald within 7 minutes without the underwater materia. And with no summons
