I grew up eating hot Potato salad. I remember once I was at a restaurant, they brought me my salad it had green stuff. I was use to a salad being hot and potato. Hope you do try it. BUTTERMILK CORN CAKES 1/2 cup of cornmeal 1 cup of cold water 1 cup of buttermilk 3 lg. eggs beaten 3 tbsp of molasses 1 cup of unbleached flour 1/2 cup of whole wheat flour 2 tsp of baking powder 1/2 tsp sea salt 1/2 tsp of baking soda 4 tbsp of vegetable oil Blend cornmeal and water in a pan. Bring to a boil, whisking as the mixture thickens. Remove from heat before it stiffens and scrape into a mixing bowl. Combine in the buttermilk into the cooked cornmeal, then the eggs, then the molasses and oil, blend thoroughly. In a separate bowl, mix the dry ingredients well. Now mix into the liquids real good. Let stand for 5-10 minutes. Cook on a hot griddle.
