The final version that I will start out with (subject to change) will be

A "Texas Traditions" brand jalapeno cheddar smoked sausage for a wiener,
wrapped in fire roasted green chile, wrapped in mostly cooked smoked bacon, and dipped in State Fair style semi sweet corn dog batter then fried golden brown (or a little browner).

Dipping sauce with be, brown mustard mixed with Raspberry chipolte.


That sounds really good. You are a cooking fool. I still use the jalepenos in my potato salad........smokin

The restaurant up the street uses an
all-hot-air cooking method now, no oils.
You cannot tell the difference in the
corn dogs, pretty interesting.
The mind rebels a little :-)

Space Dog Update!!!!

I invited Galengirl (The Possum) over for a space dog making session. I picked up some 100% Angus wieners from Oscar Mayer, some Holmes "Texas Traditions" jalapeno pecan smoked links, and some Hillshire Farms Hot Links (a skinless sausage somewhat like a wiener).

Little did I know that the Possum had been hired and trained by Iranian terrorists to sabotage the batter at every turn and to slow the entire operation to a crawl. After some de-brain-washing, she calmed down ......... a bit.

We started out with just an angus wiener in batter flavored with cayenne and jalapeno, made with cream style corn and buttermilk and got a world class dog! We then started wrapping the hot links with whole roasted green chile and partially cooked bacon and got a "to die for" corn dog. I didn't make the dipping sauce because the dogs were just too good to need anything.

The Possum came up with the idea of splitting the wieners and stuffing them with chile and bacon which created the Slow Possum Dog but was quite tasty.

The Holmes Pecan Smoked links were delicious but the skin and larger size made them a little unwieldy but super yummy.

I think my favorite was the Hillshire Farms hot link, wrapped in chile and bacon, and fried dark brown. The universe was in balance.:tongue:

...and my usual "clean as you go" style was lost in the wake of what looked like a battlefield of corn meal dust, flour and batter drips. But ya gotta love the outcomes...YUMMY! Metalwing sure knows how to invent a new-fangled treat (and tolerate possum-style assistance.) I bow at the feet of the Fry-master!
