I went to the fair last week and ate a corn dog. It was yummy. I think I'll see if I can make a better version. Maybe add some chili powder or mustard to the batter?
Anyone make their own corn dogs? Got any ideas? |

I wrap mine with green chilies, and a strip of cooked bacon, then batter them. Deep fry them at 375.

I have a very special fondness for green chilis and bacon. That sounds GREAT! Then make a dip of chipotle peppers, horseradish, Sour cream. Place into a blender, until smooth. I like it that way. |

I wrap mine with green chilies, and a strip of cooked bacon, then batter them. Deep fry them at 375. Tazz, I usually keep whole roasted green chilies in the freezer. Do you wrap the dog in a large piece (or several pieces) to completely cover the dog then hold it in place with a mostly cooked strip of bacon (fully cooked would be too brittle)? Then a couple of toothpicks to hold the bacon before battering? |

Whole green chilies if you can, I par fry the bacon. Just enough to be able to wrap it around the dog. Put the chilies, on like a coat. Then put them in the freezer for a few minutes. While making the batter, also let the batter sit for a few minutes. Remove the dogs from the freezer, them bacon should be a little set. The batter will stick better. Heat 375 oil to 375 degrees. Until golden brown.

I love corndogs. Never made them. Always wanted to make them and use cheddarwursts instead of hot dogs. The bacon and green chili ones sound good..........

The final version that I will start out with (subject to change) will be
A "Texas Traditions" brand jalapeno cheddar smoked sausage for a wiener, wrapped in fire roasted green chile, wrapped in mostly cooked smoked bacon, and dipped in State Fair style semi sweet corn dog batter then fried golden brown (or a little browner). Dipping sauce with be, brown mustard mixed with Raspberry chipolte. |
