This just gets funnier and more ridiculous with every page!
Kinda makes the healthcare debate, struggling economics, and world peace just shadows of importance by comparison, doesn't it? I realize we are talking about ribs, but seriously... Off to drive the moving truck and if the good Lord smiles on me, I'll find a nice little BBQ stand at some gas-station exit and have a yummy lunch of, well...you know! |

Whatever my skills in cooking are, they are better in BBQ than anything else. My team really did place seventh in ribs in the World BBQ Championships. I did take offense at someone stating that I was providing "misinformation" when,if fact, I was not.

Locking this thread in order to clean it up. Please be considerate and stay within the topic it's self. Take all issues not concerning within the topic to e-mail the forums are not a place for such issues. Please do not directly attack others for their opinion. In reality there is never just one way to do any one thing!!!
I have deleted several post from this thread and debated on several more. But I did in fact decide to leave the others. I may in fact go back and edit a few post along the way. This just goes to show others that how one person cooks something may not be the same way another cooks the same meal. But..........that does not in anyway mean that one cooks way is giving misinformation of the way it is done. I myself have known ribs to be cooked totally different then what is listed here and that is not to say they were done wrong just different and was great if I say so myself. Yesterday I picked up a Houston Press which is a local rag that points out things to do and eat, etc. I opened the paper to instantly find an article about "Ohio Barbecue". I could not help but laugh. They happen to have a website and the article is on the net.
http://www.houstonpress.com/2010-03-25/restaurants/ohio-barbecue/ Robb Walsh, the quy that wrote the article, also wrote the book "Legends of Texas Barbecue", an excellent collection of recipes and stories about Texas barbecue. Some excerpts from the article are as follows: "While I watched, the restaurant's owner and head chef, Bobbie Patterson, put my rib tips in a microwave oven — so much for the crunchy texture." "The big chunks of fatty pork rib tips had a rubbery texture, thanks to the microwave. They were covered in one of the owner's signature "finishing sauces." There was a vague smokiness about the flavor of the meat, but there was something weird about it." "The slogan written across the top of Bobbie Que's menu reads, "Get the taste of real Texas Bar-B-Q." If Bobbie Patterson wants to call Southern Pride-cooked meat with liquid smoke-inflected sauce "real Texas barbecue," that's his privilege. I can't fault him for his Ohio style of barbecue. He didn't grow up with Texas barbecue traditions, and there is no reason why he should adopt them now." |

... Clear Lake City in the house! Do you ever go to Goode Company for barbeque? Thoughts??? Their pecan pie is also to die for ... My Dad would drag us to this place in Pasadena when I was lil, I forget the name of it? Anyway, it had a big pig on the roof and pulled pork, beef and etc. worthy of opening mouth and inserting face! Ever been to either ... I've such a Texas trained barbeque nose that I can actually "smell" how good (or bad) it is ... taste only confirms ... |

We have a place called Brookes. BBQ by me
they claim true Texas style ribs they are fantastic ribs but I haven't had ribs in Texas yet! Gonna try this rec. When I fire up the BBQ and I'll compare.... ![]() |

Galendgirl moved to Houston and wants to see where the seafood comes in. There is a big pig on Voss at "Bakers Ribs" which is one of the best rigs joints in Texas. They started in Dallas as I recall. I ate at "Hickory Hollow" last night who was voted "Best in Houston" for chicken fried steak. Their BBQ is good too. I probably ate at the Pasadena place with the pig years ago since I worked in Deer Park during college. You should try "Central Texas BBQ" in Pearland. It is superb! I have been a fan of Good Company for many years. Their BBQ spicy pork is the best. Their Austin Baked Beans with chunks of apple and hot bits of garlic are the best baked beans I have ever had. They are also well known for their jalapeno cheese bread. Yum! You are so right about the smell. I was in Memphis years ago and decided to just walk around downtown. I sniffed the air and followed my way to excellent ribs. When driving in other towns in Texas, I roll the window down and smell my way to the BBQ. ![]() |

Another incredible rib experience to report...
I got to eat BBQ at the Luling City Market in Luling, Texas! OMGosh...these were incredible! It's not a great picture, but here's the pit area where you actually order and get served your BBQ. Those are the actual pits on the right and in the rear of the photo. It was smokey and delicious... ![]() I also got to taste ribs in Bandera, TX...they were yummy and the sauce was REALLY good, but overall they didn't compare to the Luling experience. When I eat BBQ now, I really DO think "Thank God I'm in Texas!" |
