I used to eat eggs just about any way you could cook them. Then, for some unknown reason, I became allergic to them while pregnant with my daughter. Now I can't eat them at all.

I like a good omelet with just about anything left over in the fridge in it. Tomatoes, green peppers, cheese, sausage (crumbled), onions, a spoonful or 2 of rice pilaf. Then smothered with thick, red, sauce-type spicy chili, and a bit more shredded Cheddar cheese.
I'll take a side of grits, extra butter, with that, please. |

I like them cracked open in spaghetti sauce and fried with parmesan cheese. Wow, I've never heard of that. |

My favorite omelette is Lox and Onion with fresh dill and creamy horseradish sauce (my own, homemade) with home fries and wheat toast.
Otherwise: Over medium, scrambled, poached, basted and Eggs Benedict. I also like to make 'em with some nice sausage gravy on biscuits with a side of grits (real grits, not that instant junk). |

two please, over easy oj wheat hash browns, extra crispy steak medium rare coffee cream and sugar I'll have what he's having ... bacon instead of steak ... tea instead of coffee Please cut out all the depressing articles from the newspaper ahead of time ... better yet just hand me the comics and I am good to go ... People always tell me if there is something important to know ... ...now where are my slippers? |

Omelet ideas here are awesome! Found my new place of inspiration :-D
My personal fav way to have eggs are to coddle them to about medium boiled! Put eggs in pan, fill water to just above the eggs, put on burner on HIGH uncovered, once water reaches boil (like literally the second it boils, after it simmers) cover pan and remove from burner, let sit for 6-7 minutes, remove eggs from water and shock them (in icewater or under running cold water - it helps separate the shells from the whites), and enjoy with a spoon and salt right out of the shell! Sounds complicated but it involves very little work, and you can make a dozen of them at a time. Really good latenight snack, and though I wouldn't recommend it, you can also coddle eggs in a water boiler! That's right, you can plop eggs into a water boiler, since they shut themselves off at boil. It's hard to get them soft and medium boiled, but if all else fails, you can do it. I wouldn't recommend it though. Calcium buildup blows on those things. |
