Sheila's Famous (at least that's what they tell me)... Edgar Allan POEtato Salad. (That's the Halloween name I give it, anyway; other times it's just Potato Salad) Bunch of your favorite potatoes (I like red usually) A big Vidalia onion, diced Chopped green and black olives Hellman's (oh yes, it HAS to be Hellman's) mayonnaise ...I use quite a bit cuz I like my PS creamy Maybe just the teensiest bit of dijon mustard, just to give it a little kick Bacon bits (can be packaged; I prefer cooked and crumbled) Chopped hard-boiled egg (use however many you want) Celery seed Pimentos Cavendar's Greek Seasoning (I'm pretty liberal with it; again, as much as you want) Salt, Pepper (don't need a lot of this with the other seasoning). Cook everything that's supposed to be cooked. I cook the potatoes very thoroughly cuz I like my potatoes almost like they're mashed. Don't forget to peel the eggs. Add all the other stuff and blend like mad. Chill. Eat. Enjoy! |

HomeMade Spaghetti Sauce 1 pd Ground Hamburger 1/2 pd Sausage 1 Large onion 5 Tblspn Garlic, minced oregano thyme fennel sage 1/4 cp Soy sauce 15 - 30 oz diced tomatos, drained 15 - 30 oz tomato sauce 6 - 12 oz tomato paste 12 oz sliced mushrooms 1/2 green bell pepper, finely chopped Brown the suasage and hamburger then drain. Add all the seasonings and simmer until completely cooked. After this add the rest of the ingredients and heat until hot. Voila! |

CREAMED ONIONS- 6 large onions, sliced 1 cup butter 2 tbsp. all purpose flour 2 tsp. salt 1/2 tsp. white pepper 2 cups milk In a large skillet or dutch oven, saute onions in butter until tender and golden brown, about 25 min. Remove with a slotted spoon. Add flour, salt and pepper to skillet; stir until smooth. Gradually stir in milk until blended. Bring to a boil; cook and stir for 2 min. or until thickened. Reduce heat to medium. Return onions to the pan; heat through. Yield: 8-10 servings |

Spicy Peanut Noodles
• 1 pound spaghetti • 2/3 cup natural peanut butter • 1/4 cup soy sauce • 1/4 to 1/2 teaspoon cayenne pepper • 1 teaspoon sugar or honey • 2 tablespoons vinegar • 2 cloves garlic, minced • 1/2 to 3/4 cup boiling water, if desired Cook the spaghetti in a big pot of boiling salted water. When it is tender, drain it well, and return it to the pot. Meanwhile prepare the sauce. In a medium sized bowl combine the peanut butter, soy sauce, cayenne pepper, sugar, vinegar and garlic. Mash it all together until it is smooth. The mixture should be thick. If you like, you may thin it out with boiling water, until it is a consistency you like. I use water from the boiling spaghetti and stir it a whole lot to make it smooth. When the spaghetti is cooked and drained, pour the sauce over it and toss it well. Serves 6. |

1/2 c baby spinach 1/2 of a small tomatoe sliced 1/4 c sliced black olives some sliced vidalia onion 1/4 c mandarin oranges 1/8 c sliced almonds 3 oz of sliced roasted chicken raspbery vinegrette |

The Best Broccoli Salad
I love this stuff I make a bunch for myself and keep it in my fridge for a snack any time . 1-2 heads broccoli (chopped) 8 slices cooked bacon (crumbled) 5 green onions (sliced) 1/2 cup raisins 1 cup mayo 2 tbspn apple cider vinegar 1/4 cup sugar Mix mayo , vinegar and sugar add broccoli , bacon , onions and raisins . Toss well . Refrigerate . The longer this sits the better it is . |
