its Chicago style, not New York, but here's the recipe I make at work. (I'm a pastry chef)
filling: 2 lbs cream cheese 8 oz sugar 4 eggs 1 t vanilla lemon juice to taste crust: Graham crahcker crumbs, finely ground butter, melted prepare your crust by ading melted butter to crumbs until just moist and a mealy crst forms. cream your cream cheese and sugar together and then add the eggs one at a time until well combined and batter is smooth. add the vanilla and the lemon juice and mix again. add any variations at this point, unless you are only wanting to decorate the top of the cheesecake with the flavoring. spray a springform pan with pam and then line the bottom with the crust mixture, be sure to firmly pack it on the bottom of the pan. add your batter on top and decorate as desired before placing in a 225F degree oven with a water bath beneath it. 2-3 hours (times vary depending on type and age of oen) or untl center des not jiggle. let cool at room temp. if you wrap it ater cooling and keep it stored in the fridge it can last about a week before it takes on the smell of the cooler. enjoy and have fun |

I'm guessing your grandma's recipe is a ricotta cheesecake, if you can't get t from her I have a recipe for it too. I picked it up on my stage in Florence.

Im suprised you knew that, most people never think about that type of cheesecake. With all the "normal" cheesecakes now days you cant find a good one anymore. Its not so much what is in it but how she does it. And she has been dead for a long time so getting it from her would be a little rough. |

This is my cheesecake recipe ... its so good and works perfectly for me and everyone loves it .
I haven't perfected a chocolate cheesecake recipe yet .... soon ! Brandy's New York Style Cheesecake Crust 1 Cup Grahm Cracker Crumbs (About 1 1/2 packages) 3 tablespoons sugar 2 1/2 Tablespoons butter Filling 3 Packages Cream Cheese 1 Cup Sugar 1 Teaspoon Vanilla Extract 1 Tablespoon All-Purpose Flour 4 Eggs 2 Egg Yolks 1/2 Cup Sour Cream Preheat oven to 375 degrees . Spray the bottom of a 9-inch spring form pan w/PAM . In a mixing bowl, combine grahm cracker crumbs, butter and sugar . Mix well . Press into bottom of spring form pan and bake until golden (10 minutes). Set aside and let the crust cool completely . Increase oven temp to 400 degrees . In a large mixing bowl combine cream cheese , sugar , vanilla and sour cream with an electric mixer beat until light and creamy . Add the flour , then the eggs and yolks one at a time . Mix until smooth . (Be careful not to over mix.)Butter the sides of pan and pour mixture over crust . Shake cake to smooth out and get out air bubbles . Bake for 10 minutes on 400 degrees . Reduce the oven temp to 200 degrees and bake for an aditional 45 minutes . Remove cake from oven and allow to cool completely . Refrigerate cake for atleast 5 hours (Overnight if possible) before serving . Serve with topping of choice .(Strawberry sauce , blueberry pie filling , pineapples , cherry pie filling) To prevent cracking you may wish to cook cheese cake in a water bath . (NOTE:My oven cooks hot so you may need to adjust cooking time according to your oven . You will know when the cake is done .) |

And in your grocers baking isle, just get a graham crack pie crust, put the ready made chessecake in there, get some frozen or fresh fruits, chocolate, strawberry, etc. toppings, and BAM! you gotta a cheesecake! |
