Hey thumper you eat some rare cheese if I send it to you? I gotta do my xmas mailings this weekend. I have freinds worldwide I ride with. We mail each other our small inexpensive gifts each year. Mostly xmas tree ornaments (small glass ones) cheese, meats, and trinkets. I live 6 miles from eau galle cheese. Best rarest cheeses of the world. They have everything and I'm not joking! I'm a cheese connesuir extroardinaire. Ask anyone. Ha ha ha.

Ok ill go on my cheese rants. Being a wisconsin cheesehead and 3 of my freinds working at making cheese for 15 years I've learned a lot about making cheese. I like stinky flavorful cheese. But the high buck stuff.

My father likes evil cheeses. Limburger so strong the odor will ruin tupperware and permeate everything in your refridgerator and throw my mother into a screaming spitting blob of piss n hair.

To make cheese it all comes down to the mold cultures. So if you look at it that way each cheese comes in its own group of families. So there's the stinky families. Limburgers sealed in vacuum foil. Then there's biercase which is just under limburger. Also a favorite of my father. And it uh reeks? Then under that is farmers cheese. Also stinky but flavorful.

Then under that family comes the stinky cheeses that are not so strong smelling have the most flavor and are the most expensive. Boutique cheeses that you can cook with and nibble on. These are my favorites. They are in order; gryere, asiago, and parmesan. Bree is in this culture family. So is gouda. But gouda and bree are softer and less aged.
