Gobble, gobble, gobble. Thanksgiving is my favorite secular holiday. It was one of the few times that we could be sure my Dad would be home (he traveled for work). Everyone would be together and nothing gets better than that.
This year's celebration will be at my Sister's house since she has the most room. Not my year to have my boy (pout), but I will go grab some snuggles from him during the day. New beau is joining us for the day. Fun turkey story, one year my Sister spilled her wine in the stuffing (yes, she had a bit too much). It was so good, we continue adding wine to the stuffing (in place of water mixed with broth) still. Yum! Okay, I'm babbling. Too much coffee this morning! |

My uncle always comes out on Thanksgiving for dumplings. He comes over. Sits in 'his' chair. Sleeps. Wakes. Eats. Goes back to sleep.
I should say; comes out to my folks house, as I'm got my own place. Anyhow, I'm a very fussy eater. No, I don't like homemade dumblings. I know. I suck. Anyhow, every year my mom makes peas and carrots& mandarine orange jello for me. (I almost typed jellow. Getting tired) I eat only the white meat of the turkey. And I have cherry creamcheese pie or lemon maraigne(I get that right?)or chocolate cream pie. I'm not a fan of pumpkin. I will say I appreciate it. She goes out of the way to make me happy. Her and the oldman. The whitemeat/darkmeat thing works out well, because my sister and her husband eat the darkmeat. Only what, three...four ...weeks away. This year is on cruise control. |

Your probably right, they will have the steak and shrimp buffet and Ill walk out 20 bucks poorer.
Ill probably just grab some turkey from the deli and have me a couple sandwiches. It is turkey right ? It works |

Alton Brown did a "Good Eats" episode on how to make turkey. He talks about the dangers/problems of stuffing and shows how to make a perfectly cooked turkey. (Dark and White meats are done at different temperatures, so you have to outsmart your oven to make the meat perfect) We are definitely following Alton's recipe this year, the man is a genius.

Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled. Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours.
