INGREDIENTS:
2 pounds ground beef
1 large onion, chopped
1 can pinto beans
1 can kidney beans
1 can whole kernel corn ,drained
1 can stewed tomatoes - mexican style
1 can Rotel tomatoes
1 pkg. taco seasoning mix -(opt.)
1 pkg. original hidden valley ranch dressing(dry)
2 1/2 cups water or more, to make soup broth
PREPARATION:
Brown ground beef and onions in a large pan, drain off fat. Add remaining ingredients and simmer for an hour or so .

This stuff is soooooo good . It freezes great to so you can make a big batch and have it any time . I always serve it with salsa , sour cream , guacamole , shredded cheese , corn chips & mexican cornbread . My Grandmother always made this for someone when they were sick . It can be made really spicey which really opens the sinuses .

your right. Taco soup is yummy, I know someone who makes it and it's absolutely to die for, that person also make a kick A** gulosh and tator tot casserole.

This sounds good...I have heard so much about mexican cornbread, do you also have a recipe for this??

2 eggs
1/4 cup corn oil
1 cup buttermilk
1 1/2 cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
2 fresh jalapeno peppers, seeded and minced
1 cup cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt


Preheat oven to 350 degrees. Grease an 8 inch square baking dish or a cast iron skillet. In a small bowl beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos. In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Pour batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top. Bake for 30 to 35 minutes until top is golden brown.

I cant make the mexican cornbread it never works for me so I leave that to my Mom .

Tater Tot casserole heck yesssss ...

Ingredients:
1/2 cup Onion -chopped
1 can Cream of Mushroom Soup -undiluted
1 pound Ground beef
1 (16oz.) package Tater Tots


Directions:

Preheat oven to 400 degrees F. Grease a shallow 2qt. baking dish. Brown onion and ground beef. Drain fat. Spread in baking dish. Pour soup over meat. Arrange Tater Tots over top, so that top is completely covered. Bake 35-40 minutes.




I also found a recipe for Taco Tot Recipe . Ive never heard of it but sounds good .

Ingredients:
1 pound lean ground beef
1 package (1.25 oz. size) reduced sodium taco seasoning mix
1 can (14 1/2 oz. size) corn, drained
1/2 chopped small green or red pepper
2 tablespoons butter
1 can (10 3/4 oz. size) nacho cheese soup, undiluted
4 cups tater tots, onion tater tots, or hot tots
salsa and sour cream, optional


Directions:

Heat oven to 375. Need an ungreased 11x7x2" or 2 quart baking dish. Brown the ground beef and add the taco seasoning mix.

Spoon meat mixture into casserole. Sprinkle corn over meat mixture. Saute chopped pepper in butter and then sprinkle over corn. Spread the soup over the peppers.

Place tater tots in a single layer over soup. Bake 40 to 45 minutes or until potatoes are lightly browned and the mixture is bubbly.

Serve with salsa and sour cream, if desired.

try this one:


meatball muffins(sounds weird tastes great)

2 pkgs of jiffy cornmeal mix
1&1/2 lbs. ground chuck
garlic salt
Italian seasoning
minced garlic
minced onion
pepper
Worcestershire sauce


prepare your cornmeal batter as you would normally
pour 1 Tbspn on each of the muffin pan holes
let set
combine ground chuck,3oz Worcestershire,tsp of each seasoning,and brown meatballs_(medium sized)_
on flat pan at 374*f next place browned meatballs in batter
scoop remaining batter to fill the the muffin pan cups to lightly cover meatballs
bake at 350*f for 15-20min
