PICKLED SPICY EGGS 2 dozen peeled hard boiled eggs 2 tbsp of sea salt 1 tbsp of sugar 1 tbsp of crushed mustard seed 1 tbsp of celery seed 2 tbsp of pickling spice 1 tsp of dry dill 4-7 fresh chili peppers 1 red bell pepper diced 6 cloves fresh garlic 1/2 cup of small cocktail onions 1 red onion 2 sweet Vidalia onions 2 cups of distilled white vinegar 2 cup apple cider vinegar 1 cup water Slice red onion in rings and slice 3 garlic cloves. Dice 1 chili pepper and put in sauce pan with its seeds. Combine the white vinegar, apple cider vinegar, sugar, water, salt, celery seed, dill, red bell pepper, cocktail onions, mustard seed and pickling spice in the sauce pan and bring to a boil. Put peeled hard boiled eggs, sliced Vidalia onions, sliced 3 garlic and remaining fresh uncut chili peppers in gallon glass jar. Pour in boiling sauce and put lid on immediately so that when it cools it will seal. If sauce doesn't fill the jar, top off with white vinegar until it is about 1/4 inch from the top of the ingredients. Let the mixture sit for 3 days till use. I know this is tuff to do, while sitting the favors intensified. |
