I spent the day today at a gumbo cookoff. In addition to the gumbo, the teams made appetizers to pass out and eat while the gumbo was cooking. I have had and made many stuffed jalapenos but I think these (made by my friend and teammate Jeff) are truly the best I have ever had. The original recipe came from a fellow NASA engineer many years ago.
Atomic Buffalo Turds (ABT) 20 Jalapeno Peppers 3 tubs of 17 oz soft Philadelphia Cream Cheese 2 pounds of Jimmy Dean breakfast sausage (mild or hot but hot is better) 1 TBL Garlic powder 2-3 Lbs thick sliced bacon 40 toothpicks or wooden skewers Wear latex gloves to prevent the peppers from burning your skin. De-stem the peppers, cut in half, and remove seeds and pulp with spoon. Cook sausage and crumble in frying pan. Add garlic powder. Combine cream cheese and garlic sausage in bowl. Fill half jalapeno shells with generously rounded portion of mixture. Wrap completely with bacon and secure with toothpick or skewer. Smoker (best) or oven at 300F until bacon is done. Cook cheese side up only. Note: We used really big jalapenos today and had a lot of mix left over. We could have used twice as many jalapenos. Most people would think these would be really hot but the cooking removes most of the "heat" and the result is quite mild. |

I am immediately copying and sending this recipe to my son! He 'discovered' making cheese stuffed jalapenos on the grill (wrapped in bacon, of course) last Thanksgiving and since then, he makes them EVERY time either his or his sister's college buddies come over to their house. Everyone loves them and rightfully so...they are delicious! The addition of the sausage sounds wonderful and I can't wait to taste a 'turd.'
Thanks, metalwing! PS regarding jalapenos: I'm about as 'gringa' as you can get (so say my Hispanic friends) and I can eat these. They aren't that hot and are really, really tasty! Well worth trying! |

The cooking removes most of the heat and you are left only with a wonderful mix of compatible flavors. The longer you cook them the crisper the bacon and the milder the pepper flavor. |

Remember that we had a lot of filling left over so you may want to buy extra peppers. You could make less filling but you would regret it later.
