We only hit the mid 40's today and it is supposed to be around 25-28 tonight...yeah, we live in the desert :) THAT is why we eat green chilie (unless you eat red, which is inferior by NM standards! LOL!)

GREEN makes you stand out as a "real" New Mexican...other places get plain ol' red, ya know! DAMN...and aren't you a NATIVE??? damn ..you know it .. so i should know .. green while good ,needs be be grown in certain soils in the state and prepared in the traditional manner.. not in some roller drum on the street corner..by some half-wit that skins the chili and makes it hard to peel.. |

Weeeellllll...then my Hatch chilies, roasted on my own grill with my own two little hands and lovingly cleaned and frozen are PERFECT then! If you did your red chilies the same they can ALMOST compete...it's all in the roasting :) Mmmmmmm...

Forgot to say "Damn!" damn.. you seem to have makings of a apprentice in the preperation of green chili.... first you crack open the fresh chili taking in the aroma, a bold aroma is what you're looking for ,now you taste the raw chili to get the full flavor before roasting,and if it brings tears to your eyes and sweat to your brow, it's the good stuff..otherwise it's like lettuce and only good for salads. now you sliver a clove of garlic ,toast it ever so slightly,place the toasted garlic in the bag with chili and send to freezer.. |

Eating it unroasted defeats the purpose of roasting...which IS of course, the perfect way to prepare chilies of EITHER color! The garlic idea is yummy, though! Mmmmmmm!
