I went on a low carb diet a couple of years ago this was one of my favorite side dishes.

Cauliflower Mashed "Potatos"
Ingredients
1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion ot 1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
3 tablespoons unsalted butter

Directions
Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool, pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

This sounds quite good. We make mashed turnips too, similar to mashed potatoes.

Thanks everyone, I am looking for "ANY" good ideas that anyone has tried and liked.

Thanks for the 2 recipes from metalwing and Brandy. I have tried the mashed cauliflower, but this is different, sounds good, and I "LOVE" spinach and strawberries, so will definitely give it a try.

I am down 30 pounds and going strong, just don't want to get bored. I lost 75 before, but depression and boredom creeped in and I gained it back. In a much better frame of mind now, so I'm back on track.

I'm not sure if blackbeans are low carb, will have to look that one up, but thanks easygoing.

I would love any and all ideas...Thanks guys!flowerforyou

Good for you! I have just mainly been eating meat, coleslaw, cucumbers/onions salad, california veggies with cheese, brussel sprouts, greenbeans, spinach, cottage cheese, watermelon, berries and low carb Breyer's ice cream lately. Getting bored!!

Any good ones would be appreciated!

2 tsp. prepared mustard
3/4 c. shredded New York sharp cheddar

Boil cauliflower until tender. Drain cauliflower in colander. Place cauliflower in baking dish. Mix mayonnaise and mustard together. Frost cauliflower with mayonnaise and mustard. Sprinkle on cheese. Bake at 350 degrees for about 10 minutes.

I also really love hollindaise sauce w/steamed cauliflower, broccoli, greenbeans or asparagus. You can find a good microwave hollindaise recipe here http://www.ehow.com/how_4697086_quick-lowcarb-hollandaise-sauce-microwave.html.

It would probably work about the same the mayo & mustard mixed is alot like hollindaise.

OMG....I looked up the web site and the peppers look sooooo yummy!!!! I eat a lot of the thin corned beef with cream cheese and dill pickle rolled up so I know I would love this too. I love the poppers, only this is so low in carbs! Thanks!!!:tongue:

3/4 lb Pork, tenderloin, lean, raw
1/2 cup chicken broth, low sodium
1 medium garlic cloves , minced
1 tsp fresh ginger root , minced
3 scallions , white part only, minced
2 Chile Peppers, jalapeno, whole , seeded and minced
2/3 cup orange juice
2 tbsp fresh lemon juice
1 tsp fresh lemon peel , grated
1 tbsp extra virgin olive oil
1/4 tsp sesame oil

In a medium bowl, whisk together ginger, scallions, garlic, chile pepper, lemon juice, orange juice, and lemon. Whisk in olive oil and sesame oil. Pour mixture into a large self-sealing plastic bag.
Add the tenderloins to the bag and seal. Let stand, while occasionally turning the bag, for 30 minutes.
Preheat the oven to 400°F.

Remove tenderloins from the marinade and place in a roasting pan. Roast for 15 to 20 minutes.
Meanwhile, place marinade and broth in a small saucepan. Bring to a boil. Reduce heat to medium and cook, stirring occasionally, for 5 minutes.

To serve, thinly slice pork on the diagonal. Arrange slices on a heated serving platter and nap with some of the sauce. Serve immediately.

Roast until an instant meat thermometer registers 160°F
