Mine are never dry either.

Thaw turkey.
Blanch pearl onions and garlic. Peal
Make many slits in turkey skin.
Slide pieces of onion and garlic and herbs under the skin.
Put the remainder of pearl onions and garlic and herbs in the cavity.
Place in turkey bag.
Add 1.5 cups of some kind of GOOD alcohol.
(I've used differnt each year. Brandy, Vodka, Rum, Scotch)
Tie closed.
Cook appropriately for poundage.

Perfect every time.

I deep fry several every thanksgiving! The peanut oil is too expensive to do just one!!! And mine ALWAYS turn out juicy and have a cajun flavor!!!!!

guess i should not answer cause i really wasnt impressed with it... the peanut oil cost so much and basically gets wasted... I'd rather reynolds bag mine and roast it. Always tender and juicy.

That's how I do it too.....with lots of onions and tons of butter under the skin......

if you strain the oil after its cooled off you can put it back in the container for use later. but make sure its covered so nothing gets in it
