i'm not a trained chef...i'm a cook...anything, anytime w/anything...i learned to cook from my grandmother...but i can't make pancakes

I work at the local country club here and we have two specials that we do which I absolutely love. The first is a mahi-mahi breaded in a mixture of panko and macadamia nuts, fried, and then served with a tropical salsa, which is made up of mangos, pineapples, cherries, and sometimes papaya. The sweet of the sauce is balanced with the taste of the fish, it's excellent.
I also like our blackened tilapia with a shrimp creole sauce. The spice of the seasoning the fish is seared in compliments the spice from the creole sauce, without absolutely setting your mouth on fire. It's a wonderful melding of flavors. |
