Right after Thanksgiving, I sorta started the veggie eating.
Does anyone else notice the endless aisles of crap in the grocery stores now? Geez.. ![]() ![]() I actually feel better, have more energy and have lost weight. I also find that I dont get hungry as often as I used to. Don't think I'm quite ready for the vegan lifestyle yet because I'm a HUGE fan of coffee with CREAM ![]() ![]() Not real big on milk but do like cheese. I just got some rice milk but havent tried it yet. Something about finding milk on the shelf instead of the fridge section. hmmm... ![]() |

I am not a vegetarian, but I try to eat meatless a few times a week. I like pasta dishes, Ramen noodles make a easy quick base for one pot one person meals, I never use the whole seasoning packet, too much salt. Often I don't use it at all. The noodles, butter or margerine, parmesan & peas is good.
Sometimes I stir fry the noodles with shredded cabbage, carrots, whatever I have & soy sauce. you can get creative with Ramen noodles or subsitute any pasta. Cooking for yourself sucks & eating alone sucks. |

I'm not a vegetarian, but this
is a good recipe for vegetarians. I call it Northern Bean Salad or Dip. You can serve this with chips. Get about a pound of black beans. Boil them it for about 2 minutes, then let them sit for an hour. Cut up a few slices of onion, a few jalapenos, and some tomatoes. I like the vine-ripened or hydroponic ones. Add all of these together, then add some garlic powder, chili powder, cayenne pepper and hot sauce (like Tabasco(c)). Season to taste. If you want to add cheese, greens, whatever suits your fancy to the mix, go ahead! It's all good!!! And muy caliente!!! tongue |

hi hi hi. this is good and you can just use tofu for a protein source. it seems weird to add raisins, but it's good!
Couscous Salad INGREDIENTS * 2 cups water * 1 teaspoon salt * 1 1/3 cups couscous * 1/3 cup raisins * 1/3 cup walnuts * 1/4 cup lemon juice (from about 1 lemon) * 1/2 teaspoon fresh-ground black pepper * 6 tablespoons olive oil * 2 carrots, grated * One 1 1/2-pound piece cooked turkey, cut crosswise into thin strips * 5 ounces arugula, tough stems removed, leaves washed and chopped (about 3 cups) DIRECTIONS * In a medium saucepan, bring the water and 1/2 teaspoon of the salt to a boil. Stir in the couscous and raisins. Cover, remove from the heat, and let stand for 5 minutes. Transfer the couscous and raisins to a large bowl to cool. * Meanwhile, in a small frying pan, toast the walnuts over moderately low heat, stirring frequently, until golden brown, about 5 minutes. Or toast the nuts in a 350° oven for 10 minutes. Remove the nuts from the pan and chop them. * In a large glass or stainless-steel bowl, whisk together the lemon juice, 1/4 teaspoon of the salt and the pepper. Add the oil slowly, whisking. * Toss the carrots, the toasted nuts, the turkey, the arugula and the remaining 1/4 teaspoon salt with the cooled couscous. Toss the salad into the dressing. * Variations: Substitute three cups of shredded watercress or spinach leaves for the arugula. * Wine Recommendation: It may surprise you to learn that Germany and Austria make good red wines, racy with brilliantly pure berry flavors. Look for Germany’s dornfelder or Austria’s Zweigelt for a brisk change of pace. |
