Well, I've made them with my mom in the past and let me tell you. It ain't easy. But, as to how they are made honestly I have no idea.

tamales are very time consuming. Up here where I am from, we have spanish ladies that make them and sale them. I know I sure wouldn't want to make them!!!
4-5 lb. boneless pork or beef roast 1 large onion 6-8 garlic cloves 1 recipe red chili sauce 1 recipe masa harina masa OR 1/2 recipe fresh masa about 6 dozen dried corn husks, prepared for tamales Makes About 5 Dozen Tamales Cover the meat, onion and garlic with water in a large pot, bring to a boil, reduce heat and simmer for about 2 hours until tender, adding more water as necessary (you can use the cooking water as stock for your masa). Cut meat into small cubes or shred. Prepare the masa and chili sauce. Assemble the tamales by spreading about 1/3 cup masa on the smooth side of a corn husk, place about 2 teaspoons meat in the center of the masa, and top with about 2 tablespooons of salsa. Tamales? Wow, you are brave!!!! Extremely time consuming, but if you have about a day, the will easily pass the time.
When you are looking them up, make sure you peruse, MEICAN recipies. It is a Mexican dish, created by the Indians and Mexicans, not the Spanish. So you wont find them listed on a Tapas list in a mediteranian resturant/or recipe book. Good luck....and if you become faint of heart...find a Mexican grocery store, they usually have them for sale FRESH. |
