I have three pounds of boneless chicken breasts that was on sale for 1.49 a pound. Dinner will involve them somehow. Just not sure how. I grow tired of all my usual recipes. Any suggestions? Please keep it simple.

I used to do big batch cooking on Sundays. Make a pot of pasta sauce, a pot of soup, maybe some Mac & Cheese or some lasagna, etc. I'd make 3 to 5 items all at the same time, and all from scratch. Then I would portion it all out in plastic containers, and stack them in the freezer.
Now I'm not set up for it. I don't have all the tools and equipment here. So now I keep most of my cooking simple. Nothing special. No recipes. Just throwing stuff together in a pan with some seasoning. However, when I do feel like making something nice, I fall back on the saute dishes from my restaurant days. I love Chicken Saltimboca. Or many times I'll do a stir fry right in the saute pan -- quick and easy, but delicious. Many people have trouble cooking for just one person. My advice to them is to learn saute cooking. It's how restaurants cook individual meals to order. Chicken Piccata, Stir Fry, Beef Stroganoff, Veal Saltimboca, Shrimp ala Vodka, and so many other dishes can be made this way in 1 - 6 portions depending upon the size of the pan used or the number of burners. Many dishes can be finished in less than 10 minutes. If anyone has some good saute ideas to pass my way, I'd appreciate it. I'd like to expand what I can do for the sake of variety. It would help me to mix things up again. |

Please keep it simple. simplest: wrap in foil with italian dressing and roast at 425 for 30 min or so. Had my left over steak for breakfast. Homemade chili sounds wonderful, as does pork loin. |

I only bought half of a pork loin this time. Normally I buy a whole 8 - 10 pound pork loin.
I use it for all sorts of stuff, from sandwiches --> roasts --> pulled pork --> stir fry. |
