A friend showed me a fantastic recipe for sweet pointed peppers, easy to prepare in 30 mins
slice 2 red pointed peppers in half lengthways, remove seeds and oven cook for 7 mins at 180C. meanwhile... fry 1 whole diced onion (i prefer red)at high heat untill soft (2/3 mins) add 1 sliced clove of garlic and 150g of chorizo and fry for further 2 mins add 1 tin of plum tomato (approx 8 tomatos), 4 table spoons of tomato puree, 2 tablespoons of mixed herbs and heat to a simmer whilst mixing. place tomato/chorizo filling into part-cooked sliced peppers, top with 100g grated mature chedder and place back in oven at 180c for 15 mins and you're done. Definitely my favourite dinner at the moment and easy to cook, enjoy. |
