Wiener Wrap Recipe Here's a fun idea that's easy to prepare from on-hand ingredients. 4 wieners 4 slices American cheese 4 slices of soft bread mustard and ketchup optional Lay bread slices on a cookie sheet; top with a slice of cheese. Place wiener diagonally on top of the cheese. Bring up the corners of the bread to cover the wiener and secure with a toothpick. Bake at 375 degrees for 15 – 20 minutes until the bread is toasty and the wiener is heated through. Broccoli Slaw Recipe This recipe is a great way to serve broccoli to your children. 1/2 package broccoli slaw 1/2 cup assorted (grapes, chopped apples or mandarin oranges) fruit to taste - dry ramen noodles or rice noodles prepared oriental or sesame salad dressing Toss together broccoli slaw with the fruit. Add noodles. Toss with the dressing just before serving. Chicken Pie Recipe Easy, time saving recipe for this familiar comfort food. 1 14 oz. bag frozen, mixed vegetables 1 c. diced, cooked chicken 1 12 oz. jar chicken gravy 2 c. shredded cheddar cheese 1/2 tsp. dried thyme 1/2 tsp. herb seasoning 1 pkg. (prepared according to directions) biscuit mix Heat oven to 375 degrees. In a medium saucepan heat mixed vegetables, chicken and gravy until boiling; stirring frequently. Stir in cheese and seasoning. Pour mixture into an ungreased 2-quart casserole. Drop prepared biscuit mix by spoonfuls on top of chicken mixture. Bake for 35 – 40 minutes or until biscuit topping is golden brown. Let stand 5 minutes before serving. Ham Fried Rice Recipe Save preparation time by using frozen, chopped onion or green pepper. 4 c. cooked rice 1 1/2 c. chopped ham 2 egg(s) 1/4 c. finely chopped onion 1 clove, chopped garlic 1 - 2 c. mixed vegetables Sauté onion and garlic in a small amount of oil in large skillet or wok until softened. Add meat and vegetables, sauté until warm. Remove meat from pan. Scramble eggs and add to skillet; cook until done. Add cooked rice and meat/vegetable mixture to the pan; heat thoroughly. Add soy sauce to taste before serving. Chicken Chunks Recipe Ice water helps breading stick to the chicken pieces. 1 lb. boneless, skinless chicken breast 1/2 c. plain yogurt 1 c. crush cereal crumbs salt and pepper or other seasoning to taste dipping sauce Preheat oven to 400 degrees F. Spray a baking sheet with nonstick coating. Cut chicken into bite-sized pieces and place in large bowl of ice water. Place cereal crumbs and seasoning in a shallow bowl or plastic bag. Dip chicken pieces in yogurt and then shake in crumbs to coat. Place on baking sheet and spray chicken with nonstick spray to coat. Bake 30 minutes or until cooked through, turning once. Roast Beef Wraps Recipe Ready to use chopped or shredded vegetables are often found in the produce and salad bar areas of the grocery store. 4 large flour tortilla(s) 1/3 c. vegetable herb cream cheese or ranch dressing 6 oz. thinly sliced roast beef 6 oz. thinly sliced cheese spinach or lettuce leaves, optional 1/2 c. chopped or shredded carrots, green pepper, zucchini vegetables Place tortilla flat on a piece of plastic wrap. Spread with dressing or cream cheese. Layer meat, cheese and vegetables on top of dressing. Roll up tortilla and seal with plastic wrap. Refrigerate for 2 hours or overnight. Serve with additional ranch dressing if desired. Hamburger Stew Recipe Try this great hearty stew with your children. 1 lb. browned and drained hamburger 1/2 c. ketchup 4 c. water 2 tsp. salt 2 (16 oz.) cans potato(es) 1 (16 oz.) can carrot(s) 1/4 c. onion flakes Simmer all ingredients in a large pot for 15 – 20 minutes. Save time by browning hamburger ahead of time and freezing in one meal packages. Tuna Melts Recipe Save time by purchasing deli tuna salad from your grocery store. store bought or your favorite recipe of tuna salad 6 English muffins, split 6 slices cheese Preheat oven to 375 degrees. Separate English muffins and place on baking sheet. Toast for a couple of minutes if crisper muffin is desired. Top with tuna salad and a slice of cheese. Return to oven and heat until cheese is bubbly. Taco Pie Recipe Lower the fat content by choosing reduced fat ingredients. The taco seasoning replaces any flavor that might be lost by using the reduced fat ingredients. 1 8 oz. tube crescent rolls 2 c. crushed taco chips 1 lb. browned hamburger 1 pkg. taco seasoning mix 1 c. sour cream 1 c. shredded cheddar cheese lettuce/tomato for garnish, optional Line pie pan with crescent roll dough. Place 1 cup crushed taco chips on top of crescents. Brown hamburger; drain. Stir in dry taco seasoning mix and the water specified on the package; simmer until liquid is absorbed. Spoon hamburger mixture on top of taco chip layer. Spread sour cream over hamburger and top that with shredded cheese. Finish by adding last cup of taco chips to the top. Bake at 375 degrees until brown, about 20 minutes. Serve with lettuce/tomato and salsa. Potato Pancakes Recipe Check the refrigerated section of your store for a variety of shredded, diced and mashed potatoes that are heat and serve. vegetable oil 3 c. (about 1 lb.) shredded potato(es) 1/2 c. sliced green onion or chopped onion 1/2 c. pancake/waffle mix 2 Tbsp. water 1/2 tsp. salt In large skillet, heat ¼-inch deep oil over medium-high heat to 375 degrees F. Combine remaining ingredients; mix well. For each pancake, drop scant ¼ cup of potato mixture into skillet; shape into circle and flatten slightly with back of spoon. Fry 2 – 3 minutes per side or until golden brown. Drain on absorbent paper. Serve hot with applesauce. Turkey Lo Mein Recipe Boneless, skinless chicken breast may be substituted for the turkey. 1 Tbsp. oil 1 lb. uncooked, cut into 1/2 inch strips, turkey breast 1 1/2 c. chicken broth 2 Tbsp. soy sauce 1/4 tsp. ginger 1/8 tsp. garlic powder 1/2 tsp. sugar 1 1/2 c. uncooked broken up vermicelli or angel hair pasta 2 tsp. cornstarch 1 (16 oz.) package (California blend or stir fry) mixed vegetables 2 Tbsp. water In large skillet heat oil over medium-high heat. Add turkey; stir-fry 2 – 3 minutes or until no longer pink. Stir in chicken broth, soy sauce, sugar, ginger, garlic powder and vegetables. Bring to a boil; stir in pasta. Reduce heat; cover. Simmer 5 – 8 minutes or until pasta is tender. In small bowl combine cornstarch and water; blend until smooth. Stir into hot mixture in skillet. Cook 1 minute or until thickened, stirring constantly. Mini Calzones Recipe Store small amounts of chopped vegetables in the freezer for quick preparation. 6 flour tortilla(s) 1 1/2 c. shredded mozzarella cheese 1/2 c. chopped (onions, mushrooms, green pepper) vegetables 2 oz. chopped, cooked meat or 1/2 c. drained beans purchased spaghetti sauce Spread shredded mozzarella cheese on a large flour tortilla, making sure to get the cheese to the edge. Bake at 425 degrees F until the cheese melts. Portion meat and vegetables on top of each tortilla. Fold tortilla in half, forming a calzone. Using a fork, crimp the edges together. Bake until crisp about 5 – 7 minutes. Serve with spaghetti sauce for dipping. Beef Pot Roast Recipe A classic recipe! 4 medium peeled and quartered potato(es) 4 medium (cut into thirds) carrot(s) 1 large (cut in chunks) onion 3 lb. rump or chuck roast 2 cans (10 oz. ) French onion soup 1 1/2 c. water 1 chopped clove of garlic Place potatoes and carrots in bottom of slow cooker. Place roast on top of vegetables. Combine soup, water and garlic. Pour over roast. Cover; cook on low for 7 – 10 hours. 2 Bean Chili Recipe Black beans may be substituted for kidney beans. 1 lb. lean ground beef or turkey 1/2 c. chopped onion 1 (28 oz.) can whole (cut into pieces) undrained tomato(es) 1 (15.5 oz.) can undrained chili beans 1 (15 oz.) can undrained red kidney beans 1 (15 oz.) can tomato sauce 2 tsp chili powder 1/4 tsp. garlic powder 1/8 tsp. ground red pepper shredded cheese optional Brown ground beef with onion in large saucepan or Dutch oven; drain. Add remaining ingredients except cheese. Simmer 20 – 25 minutes or until flavors are blended. Serving suggestion: Place tortilla chips in bottom of the bowl, top with chili and shredded cheese. Ziti with Meat Sauce Recipe Quick cook pasta is often available in the refrigerated section of the grocery store. 8 oz. pkg. cooked ziti pasta 1 lb. browned hamburger 1 jar prepared spaghetti sauce 2 oz. shredded cheese Cook pasta according to package directions; drain. Brown and drain meat. Add spaghetti sauce to meat and simmer until heated through. Serve over pasta. Oven Fries Recipe Check out the spice aisle of the store where you’ll find many different herb combinations. Try several to see which ones your family likes. 4 scrubbed and dried (about 2 lbs.) baking potato(es) 1 Tbsp. oil 1/4 tsp. paprika or seasoning of choice, optional Cut each potato into 8 – 12 wedges. Toss with oil and seasoning. Spread in shallow pan and bake until tender, 20 – 30 minutes at 450 degrees or 35 – 40 minutes at 400 degrees. Pineapple Cup Recipe This recipe is so simple and very tasty! 1 (16 oz) can drained, chunked pineapple 1 (11 oz.) can drained mandarin orange(s) 1/4 c. shredded coconut 1/2 c. vanilla yogurt or whipped Topping Place drained fruit in a bowl with shredded coconut; toss gently to mix. Place in individual serving dishes; top with a dollop of yogurt or whipped topping. Serve. Cottage Cheese Dip Recipe One dip with many flavor options! 1 (8 oz.) container cottage cheese cheese 2 Tbsp. milk 1/2 tsp. onion salt OR 1/2 tsp. garlic salt OR 1 Tbsp. catsup OR 1 Tbsp chili sauce 1/2 pkg. dry soup mix OR 1 small pkg. dry Ranch dressing mix Combine cottage cheese, milk and your favorite seasonings in a bowl and beat until smooth (or use a blender). Refrigerate for several hours to blend flavors. Peanut Butter Dip Recipe This unusual combination tastes great with apple slices. 1/2 c. peanut butter 1/2 c. plain yogurt 1/4 c. orange juice concentrate Mix together in a medium bowl. Serve with fresh fruit, pretzels or crackers. Fruit Smoothie Recipe Vary the flavor by using different fruit and yogurt combinations. 2 c. lowfat milk or vanilla yogurt 3 medium banana(s) 1 c. blueberries (may be frozen) or strawberries 1/2 tsp. vanilla Combine ingredients in a blender and blend until smooth. Serve immediately. Banana Muffins Recipe Keep a Ziploc bag in the freezer for overripe bananas. No need to peel just place in bag until ready to use. 1 c. enriched flour 3/4 c. whole wheat flour 1/2 c. sugar 2 tsp. baking soda 1/4 tsp. nutmeg 1/2 c. mashed (about 1 large) banana(s) 1/2 c. milk 1 slightly beaten egg(s) 1/3 c. chopped nuts Heat oven to 375 degrees. Line 12 muffin cups with paper liners. Combine dry ingredients; stir in remaining ingredients just until dry ingredients are moistened. Fill cups two-thirds full. Bake 15 – 20 minutes or until golden brown. Immediately remove from pan. Note: White flour may be substituted for whole wheat if desired. Fruit Salsa and Tortilla Crisps Recipe Try this recipe with peaches instead of kiwi. 2 medium Granny Smith apple(s) 1 peeled kiwi 1 c. strawberries 1 peeled orange(s) 2 Tbsp. apple jelly 2 Tbsp. brown sugar optional 4 (10 inch) flour tortilla(s) 2 Tbsp. sugar 2 Tbsp. cinnamon water Finely chop all fruit; mix together with sugar and jelly. To make the crisps, mix sugar and cinnamon together in a small bowl. Lightly brush tortillas with water and sprinkle with cinnamon/sugar mixture. Cut into wedges and bake at 350 degrees until golden brown, 5 – 7 minutes. Cereal Snack Mix Recipe Great idea for the small amounts of leftover cereal in the cupboard. 1/2 c. creamy peanut butter 2 Tbsp. margarine 6 c. fortified high fiber (bite sized shredded wheat or toasted oat ring) cereal 1/2 c. raisins Heat oven to 250 degrees F. Put peanut butter and margarine in a 13 x 9 inch pan and place in oven for 5 minutes to melt. Remove from oven and stir until smooth. Slowly add cereals. Stir until all pieces are coated. Bake 1 hour, stirring every 15 minutes. Add raisins and toss. Spread on waxed paper or brown paper bags to cool. Store in an airtight container. |
