Asparagus Spring Rolls INGREDIENTS 1 8-ounce package reduced-fat cream cheese (Neufchatel) 2 tablespoon snipped chives 2 tablespoon milk 1 - 2 tablespoon snipped fresh dill 1 clove garlic, minced 1 tablespoon lemon juice 1/2 teaspoon freshly ground pepper 1 tablespoon olive oil 1/4 teaspoon salt 8 dried lasagna noodles 24 asparagus spears 6 ounces thinly sliced smoked salmon 8 long chives Parmesan cheese DIRECTIONS In a small mixing bowl combine cream cheese, snipped chives, milk, dill, garlic, lemon juice, and pepper; set aside. In a large pot bring 3 quarts water and the olive oil to boiling; add salt and lasagna noodles. Cook noodles for 10 to 12 minutes or until pasta is nearly tender. Meanwhile, snap off and discard woody bases of asparagus. If necessary, trim asparagus to 5-inch lengths. Add asparagus to pasta; cook 3 minutes more. Drain; rinse with cold water. Drain again and pat pasta dry with paper towels. Spread about 2 tablespoons of the cream cheese mixture evenly over each lasagna noodle. Divide salmon evenly among the noodles, placing a single layer of salmon on each noodle. Place 3 asparagus spears on one end of each noodle, letting the tips extend beyond the edge. Roll up each noodle. Tie with a fresh chive. Stand spring rolls upright to serve, if desired. Sprinkle with Parmesan cheese. |

ENCHILADA CASSEROLE MEXICAN LASAGNA 1 1/2 lbs. ground beef 1 cup of chopped red onion 1 1/2 tsp. ground cumin 2 garlic cloves, crunched 4 tsp. chili powder 1 1/2 tsp. of sea salt 1 tsp. of white grounded pepper 1 cup of beef broth 1 8 oz can of green chilies 2 cups of taco sauce 12 12 inch flour tortillas 1 lb. Monterey Jack cheese, shredded 1/2 pound of pepper jack cheese, shredded 1 cup of sour cream Preheat oven to 375 degrees. Grease 13"x9" baking dish; set aside. In 12" skillet cook ground beef and onion over medium high heat until meat is brown, stirring occasionally. Discard drippings. Add next 7 ingredients. Simmer 10 minutes, uncovered, stirring occasionally or until most of liquid has evaporate. Meanwhile, pour 1/2 cup taco sauce into prepared casserole. Cut the flour tortillas into 2 in wide strips. Arrange 1/2 tortillas to cover bottom. Pour 1/2 cup additional taco sauce evenly over tortillas. Spoon the beef mixture in on top of the tortillas. Top with sour cream and sprinkle with 1/2 cheese. Arrange remaining tortillas, spread remaining taco sauce. Top with remaining cheese. Top with salsa or salsa Verde, with a dab of sour cream. Cover with foil. Bake 40 minutes. Remove foil and bake 5 minutes more. |

ARTICHOKE-SEAFOOD DIP 2 cans of artichoke hearts, drained and mashed 1 cup of real mayonnaise 1 cup of Parmesan cheese 12 oz of pepper jack cheese shredded 2 defrosted packages of cream spinach 1 small can of chopped clams 1 small can of chopped crab meat 1 small red onion chopped and sauté 2 celery stocks chopped and sauté 1 tsp. of minced garlic 1 tsp of sea salt Fresh ground pepper, to taste 1 tsp. of extra virgin olive oil 2 freshly squeezed lemons juice Combine all ingredients in a casserole dish. Bake at 375°F for 45 minutes. Serve with garlic rounds, French bread or crackers. |

ENGLISH CUKE WITH SMOKED GOUDA Spit the cucumber down the center. Spoon out a channel of the seeds, and some of the meat. Fill the channel with shrimp, crab meat. Season the cucumber, with sea salt and pepper. Squeeze some lemon juice or lime juice on them. Then wrap them with three to four slices of par cooked bacon. Preheat oven to 425 degrees. Place the stuff cucumbers on a baking sheet, with a baking wire rack. Place in the middle part, of oven. Drizzle with some extra virgin olive oil on top. Cook till the bacon is cooked crispy. Remove from the oven. Cover with Smokey Gouda cheese slices, or grated. Place in the top part of the oven, cook till the cheese melts. Then enjoy. |

Here is the Calzone recipe, hope you enjoy. CALZONE'S 1 lb. loaf frozen white bread dough 1 lb. sweet Italian sausages, crumbled 8 oz of thin sliced pepperoni 1 sm. onion, chopped 1 roasted red bell pepper diced 2 cloves garlic, minced 1 (8 oz.) can tomato sauce 1 tsp. basil 1 tsp. oregano Crushed red pepper flakes to taste 1/2 cup of cottage cheese 3/4 cup of shredded Mozzarella cheese 2 tbsp. grated Parmesan cheese 1 egg, slightly beaten 1 egg white, slightly beaten 1 egg yolk beaten with 1 tbsp. milk Loosely wrap frozen loaf with plastic wrap. Refrigerate overnight to thaw. Let stand 1-2 hours to soften. In a medium skillet sauté sausage, and pepperoni, until lightly brown; add onion, red bell pepper, and garlic; sauté until onion is tender. Stir in tomato sauce, basil, oregano and red pepper. Simmer uncovered 5 minutes, remove from heat and cool. Stir in cheeses and whole egg, mix well. Punch down dough if it has started to rise, divide in 8 equal parts. Form each into a flattened ball. On lightly floured surface roll out each into a 6 inch circle. Place 1/3 cup filling on half of each round. Brush edges with egg white; fold other half over filling and pinch edges together. Place on greased baking sheets; press edges with a floured fork to seal. Brush lightly with egg yolk mixture, prick tops with forks. Bake in a preheated 425 degree oven for 12 minutes, or until golden brown. Serve warm. |

Was asked to post a recipe for stuff shells that did not contain seafood. Here is one I like very much. Hope you do enjoy it.
STUFFED SHELLS 1 lb. ground beef 8 oz of grounded Italian sausage 1 lg. onion, chopped 1 roasted red bell pepper diced 1 clove of garlic, chopped Pinch of crushed red pepper flakes 8 oz. shredded Mozzarella cheese 1/2 cup of Italian style bread crumbs 1/4 cup of chopped parsley 1 egg beaten 18 giant shells for stuffing 1 (32 oz.) jar spaghetti sauce Salt and pepper 1/2 cup of grated Parmesan cheese Cook shells about 15 minutes until tender. Drain and cool. Brown ground beef, sausage, onion, red bell pepper, and garlic; drain. Place in large bowl to cool. When cool, stir in egg, cheese, crumbs, parsley, salt, and pepper. Mix well. Stuff the shells, with the meat mixture. Place 1/4th of the jar of spaghetti sauce in bottom of 9 x 12 x 2 inch baking dish. Place stuffed shells in dish, side by side, in a single layer. Pour remaining spaghetti sauce over shells. Sprinkle with Parmesan cheese and bake, uncovered, at 400 degrees for approximately 20 minutes. |

A little different dip. CREAMY SEAFOOD SPINACH & ARTICHOKE DIP 2 cans artichoke hearts (in water) 1 can water chestnuts, chopped 2 package frozen spinach 4 cloves garlic, chopped 1 small grated red onion 1/2 cup of Parmesan cheese 1/2 cup of Romano cheese 1 tbsp of parsley 1 tbsp of lemon juice 1 1/2 cups mayonnaise 2 tbsp of creamy horseradish 2 cups of crab (or artificial crab) dash of sea salt and pepper Preheat oven to 350°F. Chop artichoke hearts, garlic, water chestnuts, crab and put into a large bowl. Defrost frozen spinach and drain all excess water. Chop again and add to bowl. Add the cheese, parsley, grated red onion, lemon juice, horseradish, and mayonnaise, sea salt and pepper, as desired. Mix together put the mixture into an oven safe dish (preferably a glass pie dish). Top with more cheese. Pop in the oven for about 20-30 minutes. (This recipe can be prepared ahead of time and then cooked the next day if desired) |

STROMBOLI 1 loaf frozen bread dough 1/2 jar spaghetti sauce Red Onion and Red pepper slices Oregano 2 cloves of minced garlic 1/4 lb. Mozzarella cheese, shredded 8 slices hard salami 8 slices cooked salami 8 slices Provolone 8 slices ham capicola 6 slices cooked ham 10 slices sandwich pepperoni Thaw dough on greased cookie sheet. Spread dough on cookie sheet. On 1/2 of dough spread some spaghetti sauce and layer half ingredients. Repeat. Top with more spaghetti sauce. Fold over other 1/2 of dough. Pinch ends. Bake at 375 degrees for 30 to 35 minutes. |

I don't know if this is the right place to post this, but here goes, I am looking for a really good recipe for whats called a red velvet cake, I looked on the internet and couldn't find one that really looked all that good and what would be the best frosting to go with that, any suggestions would be appreciated please.

Hope this one will work for you Christine. I have made this one many times. I have even left out the dye. RED VELVET CAKE 2 1/2 cups of all purpose flour 1 1/2 cups of sugar 1 1/2 cups of olive oil 1 cup of buttermilk 2 eggs Yolks beaten 2 egg whites beaten to soft peaks with 2 tablespoons of white sugar 1 tablespoon of vanilla 2 tbsp dark cocoa 1 tsp sea salt 1 tsp baking soda 1 tsp apple cider vinegar 1-2oz bottle red food coloring (or 2-1oz bottle) Sift the flour- sugar- cocoa – salt and baking soda together into a large mixing bowl. Then combine the wet ingredients together. Then add the wet ingredients, into the dry sifted mix. Slowly whisk mix, while adding the wet and dry ingredients together. Mix all ingredients together till they are combine, and incorporated. Then fold in the egg whites, gently. Pour into two 9” by 3 inch deep cake pans. Pans that have been lightly butter. Then bake at 375F for about 30 to 35 minute. Icing: 1 Box (16oz) confectioner's sugar (sifted) 1 stick of unsalted butter, softened 1 8oz package cream cheese soften, to room temperature 1 Tablespoon of vanilla 1 cup of crushed almonds Combine first 5 ingredients. Add remaining ingredients until icing forms peaks. Fold in the almonds and spread over the cake. Top the cake with cherry half’s. |

BAR-B-Q GROUND BEEF 1 lb. of hamburger, browned & drained 1 red onion 1 yellow onion 2 green onions 2 carrot 1 stalk of celery 1 tsp of paprika 1/3 bottle of Kraft Bar-b-q Sauce 2 tbsp. Worcestershire sauce 2 tbsp. brown sugar Food processor carrot, celery and onions. Then add all ingredients to hot skillet. Stir well. Heat on medium heat 5 minutes. Serve on bun. |
