The ribs were awesome, my aunt was disappointed about the cake so my mom made one, so it turned out great, when I was over there I was watching the food network channel, pretty interesting, I couldn't believe the stuff they come up with me, they were making fried hamburgers in this coating and frying in a deep fryer oreo cookies and twinkies and mixing it all together, I thought that was a bit weird very different.

Heat the oil to 350°F. Deep fry the sopapillas; a few at a time, browning on one side, and turning only once. They will puff up. Drain on absorbent paper and serve with powdered sugar sprinkle. Cinnamon sugar is used in the street vendors in Mexico City. |

MOM'S CHOCOLATE GRAVY 2/3 cup of granulated sugar 1/3 cup Hershey's cocoa 7 tbsp of sifted flour (or Wondra flour) 1 cup of warm whole milk 1 12 oz. can of evaporated milk 1 egg beaten 1 tbsp of vanilla Mix the flour, sugar, cocoa, beaten egg, a bit of the milk in a separate bowl. Set aside. In a pan prepared with butter coat, heat the milk until warm. Turn on medium heat. Transfer the flour and egg mixture to the saucepan. Continue stirring as it thickens, so it won't stick or burn; reduce heat as necessary. When it reaches a pudding-like consistency, remove from heat. Gravy thickens slightly when removed from heat. Stir in vanilla. Using an electric mixer or a hand mixer slowly beat the warm chocolate mixture. To help avoid any lumps. If needed sift through a strainer with a wooden spoon. Serve with biscuits, or beer bread. You can combine powder cinnamon and powder ginger. Serve it over French toast. Or serve over waffles. |

TEMPURA BATTER FOR FISH 3/8 cup of flour 1/8 cup of cornstarch 1/4 tsp. baking powder 1/8 tsp. baking soda 1 egg white 1/2 tsp. sea salt 1/2 cup of lemon water 1/2 tsp. garlic powder 1/2 tsp of onion powder 1 tsp. of parsley 1/2 tsp. of smoked paprika Flour for dusting Separate eggs. Beat white until frothy and light. Do not over beat, white should be very liquid and should not reach a stage where a peak will hold. Sift the flour, cornstarch, baking powder, and baking soda, salt, garlic powder, onion powder, smoked paprika. Sift them into a large glass mixing bowl. Fold all ingredients together and beat only until smooth. Roll fish in flour, and then dip into tempura batter. Fry in hot oil. I have used this recipe for deep frying stuff peppers. |
