I say "Merry Christmas" and that will always be what is first to me, but if I know the person I am speaking with celebrates Chanukah, I will wish them a Happy Chanukah. If I say Merry Christmas and they get offended and tell me that they celebrate another holiday, I will wish them a good holiday of their choice.

Or just tell them to "have a nice day".....
