If anyone has a better knowledge on vegetarian dishes that are simple and easy to make please pass them on.
My childrens step-mother is going vegetarian at her house and wants recipes. If anyone has some post it here and I will pass the good food dish ideas on to her. This would help her out so very much! Thanks a Bunch guys! M. |

you can use my easy soup recipe (minus the chicken sausage or add vegan chicken) 1 small can stewed tomatoes 1 yellow squash (sliced) 1 box frozen creamed corn w/bacon sliced chicken sausage (I use organic) American/Cheddar cheese Ritz/or other crackers Empty tomatoes,squash,corn & sausage into large microwaveable bowl. heat in microwave until vegetables are soft (at least 10 mins) Put cheese on top of bowl and heat til melted. Serve with crackers....Yum! |

Ok, I'll try and help out a bit with a simple lentil soup recipe. I don't claim ownership of the recipe it simply started off as one I got off the net. In the proportions listed this recipe should yield any where from 18-22 8 ounce portions, which if placed in small plastic bowls with lids can be frozen and nukes for later meals or snack. This one has also proven to be a favorite with non vegs. So here it goes,
9 cups of water about 2 - 2 1/2 cups of green lentils 4- 5 carrots peeled 4 - 5 celery sticks 4 - 5 decent sized tomatoes (the riper the better) 1 - 1 1/2 cups soya bean 1 -large onion (softball sized) 1 - head of garlic (not just a single clove) 5 - large potatoes salt to taste black pepper to taste red chillie flakes to taste curry powder to taste ground cummin powder inmitation chicken stock (not nessasary, but does richen the soup up a bit, subsitute a quarter stick of butter or a few table spoons of olive oil for similar effect) boil the hell out of everything untill carrots are tender, let cool in the pot for a bit, then hit it with an imersion blender, untill you have a even consistancy. One thing to keep in mind with the spicing, I have found from personal experience that the spices can hide in the flavour of the soup, so spice taste test, let simmer a few minutes and test again, add more as desired. Keep in mind the chillie flakes will bring heat to the front of the mouth, the curry will bring heat to the back of the mouth. The cummin if over done, will heat the entire mouth. The soya beans will help add a bit more protien to the recipe, but can be left out if you find the texture objectionable (the soya beans will reduce to tiny little white pearls) and if you wish add in a good handfull of crushed flax seed as a good source of fatty acids. I have two nephews and a niece (ages 7 - 13) and they loved the soup as well. Serve with buttered bread, the richness of the butter compliments the soups earthiness very well. Enjoy Dan |

Seriously, without meat the balance of proteins and other nutrients becomes more critical and needs attention. It is better to follow a programmed diet (more or less) so you get balanced nutrition. Does she eat eggs? cheese?
The best source of protein is probably soy. Stir fry with tofu is about as healthy as you can get but some don't like soy. Does she drink soy milk? ... or cow's milk? One of the most common veg dishes is beans. I like pinto beans. The protein isn't complete so you need to eat it with corn or wheat for balanced amino acids (protein). Beans One pound of dried pinto beans soaked overnight. One jar of Pace piquante sauce. One TBS cajun seasoning (more or less to taste) Two TBS chili powder One Half tsp black pepper One Half tsp cumin Two cans veg stock One onion chopped coarsely. One or two cloves garlic chopped. Discard water in which beans have been soaking. Place in covered pot with stock and other ingredients. Add water if necessary to cover beans. Bring to a boil then reduce to simmer until beans are soft but not mushy. This is one of the most common and healthy veg dishes. |
