Can't you get Gumbo just about anywhere in TX? No, it is a regional thing. Houston is a gulf coast port for seafood and adjacent to the Cajun areas of East Texas there is lots of gumbo. Try getting good gumbo in, say, Fort Stockton. It ain't gonna happen. |

Chicken and Sausage are favorites too, as are mixed seafood (shrimp, crabs, oysters, and fish), alligater, duck, etc. I have many, many, many recipes but I also have a cookbook with nothing in it but gumbo recipes. The heat is usually provided by red pepper (cayenne). You can reduce it or add it to taste. Some gumbos are thickened with file (ground sassafras leaves) or okra, or both. What sounds good? |

I found that some parts of the tail has meat that is rubbery and chews kinka like a chicken nugget. Other parts are a lot like chicken with a good texture and flavor.
