I'm not a Vegan (no animal protein at all) but I am a lacto/ovo vegetarian -- which means I eat dairy and eggs -- and macrobiotic follower. I am also a fitness trainer and nutritionist. I need a wide range of knowledge to assist my clients. Veganism, lacto/ovo vegetarianism and macrobiotics are just a few of the dietary needs of many people. I have to educate myself in all areas. Some diets are lifestyle based and some are religious based. In the case of dairy, some people are lactos intolerant and soy or veggie products are used. I am a food chemist of sorts!
