I had the urge to experiment today. I went to the fridge and there sat some fresh hot Italian sausage, some no fat ricotta cheese, some cinnamon sugar tortillas (just the tiny hint of sweetness) and various hot sauce type items.
I fried up the Italian sausage crumbled like typical taco meat, spread some ricotta on the warmed tortillas, then spread the hot meat on the cheese. I then poured a healthy dose of Tabasco Chili Recipe in the tacos. These were excellent soft tacos by any standard. The cheese lacked sharpness (a minus) but it had no fat (a plus). In any case, if you ever feel the need for tacos and you don't want to make and season the meat mixture, hot Italian sausage makes a great substitute. Fry it up dark and a little crispy. |

I will try the hot italian sausage instead of the normal ground beef. The cinnamon sugar i'm for sure about,an also the ricotta. Pepperjack cheese sounds good instead of ricotta,but it also counts for what you have on hand at the time... |

Tell ya what...for just using what was on hand to experiment a bit....that sounds like a pretty good move.

Just for the record I had lots of different kinds of cheese in the fridge plus the ingredients to make several different styles of pasta and sauces. I just felt like experimenting. The goal was "fusion" between the standard Tex-Mex taco and Italian.

I don't know about the Mexicans for they don't like their tacos to be tampered with. |

LOL The funny thing is that most "Mexican" food in the US is not Mexican at all, it is Tex-Mex, which is more Tex than Mex. I went to Mexico some years ago and ordered Enchiladas. What came out was closer to tomato sauce on corn tortillas than anything else.
Chili was invented in Texas and wasn't even eaten by Mexicans. The real Mexican dishes like mole are generally different from what is served in the US. Most Americans love Tex-Mex but are not that fond of Mex-Mex. Tex-Mex has been creeping North for years. |

Wow very interesting to know. I never been to Mexico, but always saw on television their fiestas. Look like alot of fun.
Then it is the Tex-Mex that has been taking over the country slowly. Everyone I know loves Tex-Mex food. I wonder which is the most popular in America? Hot dogs Hamburgers Pizzas Tacos |
