Not a big beef fan, though I do love a good cheeseburger. Steaks, I can barely tell the difference between cuts, all pretty much the same to me flowerforyou

I like many cuts and beef dishes. One of my favorites is prime rib with a heavy crust of rubbed seasoning cooked at about 400F over mesquite coals. Medium Rare with the juices collected and concentrated for a rich au jus. Served with some fresh sour cream mixed with freshly grated horseradish.

My cook off team makes this dish at the Houston Livestock Show and Rodeo.
