I'm making another today the brown bag I didn't feel comfy using oven started getting smokey so had to ditch the bag this time I'm using what they call red baking apples ??? Never heard of those. Not that I know that much about apples. I cook with Granny Smith and eat Galas or Johnna Golds. Fujis are pretty close to Galas but not as crisp. I grew up eating Red Delicious like everybody else but I like the crunchy ones better. If you put a little strip of foil about an inch wide gently curved over the edge of the crust you can keep the edge from burning. Just remove it a few minuted before the pie is ready and let the edge brown with the rest of crust. If I don't do this I end up with burned edge or doughy middle crust. |

Yum. Where is heaven anyway? I'm in Manvel, there is a place nearby called "Almost Heaven". I posted a Texas Joke yesterday about Texas and Heaven. It just struck me as a coincidence. I'm about twenty miles south of houston. |

My old roomate who is from the South, where they bake a lot of pies told me the secret to making the best apple pie is to use as many different kinds of apples as you can find so u get the taste and texture of each one. She did make the best apple pie ever!
Personally I like Granny Smith the best but yeah the more variety for the pie, the better. |

Usually fuji and then some kind of tart apple. The sweet n tart compliment each other. Also, I always sprinkle in a little lemon. |

I think she also added some Lemon juice to the apples, brings out flavor The lemon juice ( about 3 tsp. ) also helps the apples from turning too brown while cooking. Another hint: 3 pats of butter cut in half and placed on top of the apples before you put on the top crust helps the top cook flakey and not soggy. |

HAH I can even make the recipe and cooking section dirty....my parents would be so proud. |
