I decided one day to play with some Bisquick Lite and came up with this recipe. It is very tasty and extremely simple.
One cup of Bisquick Lite one egg one four oz cup of yogurt, either flavored or not one handful of chopped nuts (I like pecans) one handful of chopped dried fruit (I use the mixed kind) one handful of pine nuts (if you got 'em, this one ingredient makes the show!) one or two tbs of sugar or Splenda (optional) half a teaspoon of baking powder will make them a little lighter but is not necessary Add egg and yogurt to bowl and mix with a fork. Add other ingredients and mix until roughly blended (this only takes a few seconds) Spray muffin pan with Pam (I don't know if this is necessary but I do it anyway) Fill holes about two thirds. Bake at 375 for about eighteen minutes or until lightly brown. Makes five or six muffins. You won't believe how easy this is. |

This sounds mmmmmmmm.
I have a simple muffin recipe I make too, and friends always beg me to make them. Use 2 packages of corn muffin mix. Add 2 Tbl of sugar Add 1/2 cup of cranraisins Mix corn muffins as directed, add the other ingredients and bake according to package directions. Yield 1 dozen muffins |
