1 tbsp. olive oil
1 large clove garlic,pureed 2 cups sliced zucchini 1/4 tsp. salt black pepper(optional) 1 tbsp. chopped fresh basil 3 tbs. butter 2 cups chopped broccoli flowerets 1/4 tsp salt 1/8 tsp. nutmeg 8 ozs linguine 3/4 cup chicken broth parmesan cheese Heat olive oil in a large skillet. Add the pureed clove of garlic and saute until golen brown. Add the sliced zucchini,salt,pepper and chopped basil and saute briefly, 3 to 5 mintues. In a second skillet, heat the butter,add the chopped broccoli,salt,nutmeg and black pepper and saute 3 to 5 mintues. Cook the linguine in boiling salted water. When liguine is almost cooked, combine the zucchini and broccoli, add chicken broth and simmer briefly. Drain liguine, transfer to serving plates and top with zucchini and broccoli sauce. Serve at once. passing the freshly grated Parmesan cheese |
