Two tricks: Prep the batter with enough yeast to form air pockets. Or use a baster to put fluid in the batter in pockets, that the cake batter soaks up during cooking (but it leaves tough spots since the batter won't rise evenly.

Two tricks: Prep the batter with enough yeast to form air pockets. Or use a baster to put fluid in the batter in pockets, that the cake batter soaks up during cooking (but it leaves tough spots since the batter won't rise evenly.
