We refer to friends as him or her depending upon the sex.
Why are we referring to potential partner or a date as they or them are there two of them? or more at the same time? I am just wondering

A potential partner or date is always referred to in plural form. Why do we do it? Because we are preparing ourselves, in advance, for the divorce. One rarely goes to divorce court alone. It's always ones ex-to-be and their attorney, hence, the "they" or "them". Call it a "Freudian slip"!
