I oven roasted a whole chicken two nights ago. I eat alone, so there is pretty much still a whole chicken left. What should I do with the rest? Anyone have any ideas? I would hate to throw it away.

ewww, the possiblity are endless! Recently tried a baked mac and cheese at applebees, tasty, they used a cheesesauce tossed in penne pasta, of course add some chicken, sprinkle some parm cheese in with that, than they topped it with frenchfried onion rings, the kind in a can, I think they are French's. Comfort food yes. Also, Zaterians makes a dirty rice mix, follow the directions and add the cook chicken at the end. Thats really good. do chicken enchiladas, take the pulled chicken, shredded cheese, flour torts or corn, roll and top with enchilada sauce, serve with mexican rice. Oh god, I'm hungry

ok...here's the white chili recipe!!

INGREDIENTS:

* 1 lb chicken, cut up into small chunks

* 1 cup chopped onion

* 1 can (or the equivalent) chicken broth (i use the broth from boiling the chicken)

* 2 cloves of garlic, chopped finely

* 2 tsp Cumin seed (ground will not withstand long cooking as well)...but i used the ground, I just added it later in the cooking process.

* 1/2 tsp dried oregano leaves

* 3 -15oz cans white beans (great northern or cannellini), drained and rinsed

* 1 or 2 chopped red, green or yellow bell peppers, or combination (i only put green peppers in it)

* jalapeño chili peppers, fresh, jarred or canned, optional or 'to taste' (depending on how much heat you like!)

PREPARATION:
In a 4 or 6 quart crockery cooker combine the chicken, onions, chicken broth, garlic, cumin and oregano.

Let cook awhile on low (approx. 3-5 hours, depending on your schedule)

Now here is the important part if you don't want mushy chili.. Add the bell peppers and jalapeño peppers (if using) no earlier than the last hour or hour and a half before serving.

Top each serving with shredded Monterey jack cheese and or broken tortilla chips if desired.


I put a whole 8 oz bag of monterey jack cheese in the chili then put more on top. I also added a bit of the jalapeño juice in the chili....i used the jar of jalapeños. I also used a lot of cumin...because I like it!! And I didn't really measure the spices, just dumped some in.
