Pretty sure it's a non-digestible fiber... But watermelon is gross, it's like sticky water, blehhh Finally, somebody that agrees with me! Only fruit I've ever had that I really don't like. Even Durian fruit is better, and you have to hold your nose when you eat that. Smells like feet :/ OMG ya'll have never had a good juicy ripe red watermelon then shsh  matter of fact have what is left of one in my fridge. Shshs my 6 year old granddaughter loves them with a passion but then she loves all kinds of fruit. I buy those little ones sometimes the size of a cantaloupe and she can eat half of it by herself. And she is little too lol
no silly durian smells like feet!
